### Ingredients
- 65g sourdough starter
- 300g 100º F water
- 10g honey
- .5g monk fruit
- 500g bread flour
- 20g olive oil
- 9g salt
### Steps
- in large bowl, whisk starter, warm water, and honey until dissolved
- Stir in flour, oil, and salt with dough whisk
- wet hands and finish mixing
- let rest for ~30min
- stretch and fold until tight (~4x)
- let rest at room temp > 8 hours
- spray pan
- in bowl, flatten to release air, roll into a log shape, place in pan seem down, mold into form, let rest for > 1 hour
- spray pan, bake in center oven at 375ºF for 40 min
- let cool and firm for 10 min, remove and place on cooling rack
- Wait >1 hour before cutting to prevent deflation
